Sweetly spicy salad

As seasons change, so do our food choices. Leaves turn color and fall to the ground, and our palates turn to hearty fall fruits and vegetables.

A delicious segue from summer berries to the taste of autumn can be found in this sweet and spicy salad filled with unexpected pleasures ... sweet bites of crisp apple, creamy nuggets of avocado and the salty crunch of corn chips.

Combine this with fresh romaine and toasted pecans in a spicy, caramel dressing and you have an ideal seasonal meal all by itself or the perfect accompaniment to a fall meal such as stuffed baked squash. 


Sweet and Spicy Chopped Salad



Romaine lettuce, chopped crosswise into strips

2 Honeycrisp apples, cored and diced

2 avocados, cubed

1 cup pecans, toasted and coarsely chopped

1 1/2 cups yellow or blue corn chips, broken

1/2 cup red onion, finely chopped (optional)

Combine ingredients and toss gently. Just before serving, pour dressing on salad, folding gently to coat. 



1/2 cup caramel apple dip

1/3 cup cider vinegar

3 tablespoons water

2 teaspoons ground cumin

2 teaspoons hot sauce

Salt, if desired

1/2 cup canola oil

In a small saucepan over medium heat, dissolve caramel in the water. Whisk in vinegar, cumin, hot sauce and salt. Transfer to a glass jar with tight fitting lid. Add the oil and shake well to blend.
