This simple salad will complement the colors of the season on your holiday dinner table. Cole slaw is a refreshing change from leafy salads and this one has a decidedly festive flair, along with a dressing that’s both peppery and sweet.
Ramen Cole Slaw
2 1-pound bags cole slaw mix
1 bunch scallions, chopped
1/2 pound frozen peas, thawed
1 red pepper, chopped
Combine ingredients, mix well and chill.
Toasted slivered almonds
5 tablespoons sesame seeds
2 packages ramen noodle soup mix (chicken flavored)
Break dry ramen noodles into small pieces. Add sesame seeds, almonds and dried cherries. Mix and set aside.
3 tablespoons sugar
1 1/2 tablespoons pepper
1/2 tablespoon salt
2 tablespoons Accent
4 tablespoons seasoned rice wine vinegar
2 seasoning packets from ramen noodles
1/2 cup sesame oil
1/4 cup olive oil
Mix in blender or shake really well.
Just before serving, toss all ingredients together.
